Go-To: chip dips

So, for a party I have 2 dips I go to and are always a crowd pleaser
1. Chili dip (2 ingredients)
- chili ( I usually get it wih beans and vegetarian to be safe with our friends that don't eat meat)
- cream cheese (I usually get low fat)
Heat in a saucepan

Until cream cheese melts.. and THATS IT!!


easy, right?

2. Corn Salsa
- 1 can of sweet whole kernel corn
- onion
-cilantro
-jalapeno

Chop everything up and drain corn and mix


Ta-DA! done.

I had them as sides with a burger and they were delicious.

My first.. Derby

So this past weekend we (P and I) went up to Beloit, WI
For this mixer..

A mixer is when a bunch of teams from all over come and play together. There are some advantages and disadvantages, but ALOT of fun.


Beloit is about 3.5 hours away from us, so P wanted to fly. With a 7 hour round trip on top of an 8 hour round trip to get from work to home and back, he would have spent all weekend in a car. Which is evquvalent to driving with a 5 year old.

So we rented the above plane to get to the bout, yup I have my own personal private pilot :)
There were 3 bouts: all ladies, fresh meat (me) and a co-ed

I scored for my team, even though we lost.

It was still a fun time.
I can;t wait to play again.. yay!

The truth.. you can't handle

Sorry guys, I have been MIA. I am planning on going home in a few days. I have a huge order of custom invitations I need to finish and I have been goone the last 2 weekends.
I will update you when I can, please don't hold your breath.

Since Amy from All in a Day wrote this post
It hit me that I was in the same boat and feeling the same emotions.
I thought I was alone, but I am not.

Well I am still going to write what ever I want and know that I am never going to be a big blogger AND spend time with my husband when he is here on the weekends
I felt like I was neglecting him because a blog post was more important, well its not.

So thats that. I have a lot to share with you but we will get there someday.

Try it Tuesday: White Cheddar mac & cheese

So who doesn't like mac & cheese? Well, frankly I LOVE it.
I actually love all pasta, add cheese and I am in heaven.
I found this receipe on pinterest and had to try it.

I had most of the incredients already so I just used what I had.

I didn't use velveta ( I don't care for the stuff)
Instead, I used goat cheese, mozzerella and sharp cheddar cheeses
I also used whole grain pasta and didn't need to add the broth/wine


The end product was amazing and wonderful.

Your epidermis is showing..

Do you remember that as a kid? Yeah, thats your skin.
Your skin is the largest organ on your body that heats, cools and protects you.
Pretty cool huh? I think so.


Anyways, I wanted to get a little personal with you in my little tiny piece of the internet. 
(I am not doing this to get attention or sympathy, I just want to share my story)

About a month ago, I went to the dermatologist (derm) after a referral from my physician. 

Lets back up a bit, I have gone to a derm since i was about 13-15 for multiple different reasons. I have always been told that I need to stay out of the sun. Have you ever met me? I love the sun and being outside even if its only for 5-10 mins. Well, this has always been my worst enemy. 

I have had 5 moles removed before now and 2 with architectural defects,  
please get your irregular moles checked regularly
(thats my preach) 

Well I hadn't been to a derm in three years since I moved here, back to a month ago.
My physician took 2 moles and sent them in. I received a phone call (always bad news) about a week and half later stating i needed to come back for more investigation.
A month later (today), I went in to get biopsies of both areas.
My doctor said that the way moles work is:
- Normal
-Architectural Defects
-Aplastic Nevi
-Melanoma (Cancer)

These moles were both aplastic nevi (a typical mole). The problem is that some aplastic nevus can lead to melanoma and have to be completely extracted so that they don't turn into that. 
So today I had both nevi taken out further.

With a sense of relief and a bit of pain, I finish up this story.

A box worth a 1000 words

How to build a derby box car..
Our league had a challenge for each of the 4 teams to build a derby box car to race at half time
The rules were simple; no wheels, use cardboard and use your imagination

(Come on now, how was I not going to help in this)

On our forum we thru out ideas left and right and slowly came up with a "plan"
We didn't have a good box, so instead we went to Walmart and asked to have some of their boxes
The boxes we found were kinda short but we had the idea of taking several of them with us

We built our box out of 2 boxes stacked on top of each other and taped together for stability
Next, we needed our box to slide
We knew we couldn't have wheels, but we needed something to make it easier to push a small adult
So we came up with fleece felt and let me tell you I am glad we did!

Our team is called the vice quads and has a miami vice looking logo so we went with it
I drew out the miami vice sky line and that went around our whole box
I glittered the palm trees, that a team mate drew out, for awsomeness.
A teammate made the flamingo and thats pretty much our box

Try it Tuesday: Bacon, Beer & Cheese Risotto

These weeks have been flying by.
Last week during my cooking phase (it comes in phases)
So yuou should know, risotta is one of my warm and fuzzy comfort foods.
I love risotta, its creamy and fulfilling and carb loaded; what's not to love abotu it.


I found this recipe on pinterest and had to try it



I mean really can you resist those ingredients?

I couldn't.
Would you make this receipe again? YES
I loved it, but i would add more bacon and less broth. I thought with the beer and the broth it was almost soupy. I also thought it might need more flavor.
